Millet Meal Tabouleh
Ingredients:
- 1 cup of millet
- 3 cups of water
- 1 cucumber, pealed and chopped
- 3 tomatoes - chopped into pieces
- 1/2 yellow capsicum - chopped into pieces
- 1 cup of chopped parsley
- 1/2 cup of fresh mint roughly chopped
Dressing
- 1 1/2 tsp Dijon Mustard
- 1 1/2 tsp Organic Coconut Palm Sugar (or sugar substitute)
- 1/3 cup Biogenic Organic Apple Cider Vinegar
- 1/3 cup Olive Oil
- 1/2 clove chopped garlic

Method:
- Prepare the Millet Meal by adding 1 cup of the millet to 3 cups of water. Bring the boil and simmer for approx. 20-25 minutes until the water has been absorbed and the millet is fluffy. Allow to cool.
- Gentle combine all the ingredients
- Carefully fold in the cooked millet meal
Dressing
Combine all ingredients and whisk. Drizzle over the tabbouleh
