Fruit Muffin with L.S.A.


2 cups SF unbleached wholemeal  organic self raising flour

½ cup SF organic coconut palm sugar

¾ cup SF organic LSA

1 teaspoon cinnamon

¾ cup oil (canola or light olive)

1 cup plain greek yoghurt

2 eggs lightly beaten

1 ½ cups

Preheat oven to 180C (fan forced). Lightly spray a muffin pan


Mix all the dry ingredients in a large mixing bowl.

Mix wet ingredients in a separate bowl.

Add wet ingredients to dry and mix together

Turn in fruit to mix. Gently combine, trying not to mash.

Spoon mixture into muffin trays and bake about 15 -20minutes. Muffins will be ready when skewer comes out clean and they are nicely browned on top.



This recipe features a mix of organic and conventional products. A key ingredient, L.S.A. adds a lot of nutrition to this favourite snack.
